Step 1: Sautee chopped onion and garlic with some oil and salt in the instant pot until the onions are translucent
Cut off the stems of the peppers (1 pound) and cut in half
Add chopped peppers to the pot
Add 2 cups apple cider vinegar, 1/4 cup coconut sugar, 2 tsp xanthan gum, 2 tsp salt, 1 tsp citric acid
Add water until everything is submerged (about 2 cups) and give it all a good stir
Cook on high pressure for 30 minutes, let the pressure come down naturally or you'll fill your kitchen with capsaicin
It's cooked! Now grab an immersion blender and blend until smooth!
It's a sauce! Time to put it into little bottles
